Pumpkin Pie Cookies
Moist and delicious Pumpkin Pie Cookies made with white chocolate chip cookies are the PERFECTLY spiced treat on a crisp Fall day!
Every year at Thanksgiving I eat way too much turkey, cabbage rolls and a variety of other side dishes that are usually only consumed during this special occasion. However, what I really look forward to and crave at this time of year is the sweet taste of anything that has pumpkin spice in it.

A few years ago my mom made some pre-packaged Pumpkin Spice Cookies. They were such a hit with myself an my kids that I just had to try my hand at creating my own recipe when they weren’t in season. Since that time is nearing I thought I would share the recipe with you all so you to can satisfy your cravings.
Ingredients
- 1 cup butter, melted
- 2 eggs
- ¼ cup granulated sugar
- 1 cup golden yellow sugar, packed
- 2 ½ cup all-purpose flour
- ½ tsp. baking powder
- ½ tsp. salt
- 1 cup pumpkin pie filling
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- ¼ tsp. nutmeg
- 1 bag white chocolate chips
Directions
- Preheat oven to 375°.
- Beat eggs and melted butter in your stand mixer until egg yolks are broken. Add sugars and vanilla extract.
- In a separate bowl combine flour, baking powder and salt. Add to wet mixture and continue mixing on low until evenly blended.
- Mix in pumpkin pie filling, cinnamon, nutmeg and white chocolate chips.
- Spray cookie sheet and add 12 spoonfuls of cookie dough. Tip: Use a cookie scoop for the perfect sized cookies.
- Bake for 9 minutes or until edges are golden brown.
