Bunny Tail Donut Bites
When it comes to special holidays I’m all about the “themed foods”. If they’re versatile, meaning I can make them for other holidays also, then it’s definitely something I want to add to my book of recipes.
These Bunny Tail Donut Bites are adorable and perfect for Easter!

Makes 32 donuts.
Ingredients
- 1 can of refrigerated canned biscuits
- 2 cups of powdered sugar
- 4 tbsp of milk
- 1 tsp of vanilla
- 3 cups of sweetened coconut flakes
- 1 cup of vegetable oil for frying
Directions
1. Pour vegetable oil into a saucepan and place over medium-high heat.
2. Take biscuits out of the can and lay them on a cutting board. Use a 1 inch round cookie cutter (or even the cap of an olive oil bottle) to cut approximately 3-4 circles from each biscuit.

3. Gently place 4-6 of the donut rounds into the oil at a time. When one side is golden brown, use tongs to flip over and fry the other side.
4. Take out and let cool on a plate.

5. In a shallow bowl, mix together milk, vanilla, and powdered sugar to make a thin glaze.
6. Pour sweetened coconut in another shallow bowl.
7. Dip each donut into the glaze and roll around in the coconut. Place on parchment paper to set.

This particular recipe was created with Easter in mind but they can also be made during the winter months and be called Snowball Donut Bites (or whatever else you choose). For other holidays the coconut can be dyed with food colouring to make it more festive to whichever season you’re in. With a recipe like this, the possibilities are endless and that’s why it’s one of my favourites!
