Let me first start off by saying I am not a fish person. It’s not something I choose to eat at a restaurant or want to make at home. I don’t like the smell and how it lingers on everything and too much fish tends to twist my stomach. However, that doesn’t mean I don’t know the importance of having it in our diets and that’s why I try to make it at least once a week. Because of my dislike for fish I try to change it up a bit; breading, baking, frying…this week I decided to bake sole fish and make a spicy mango chili salsa to go with it.

When I do cook fish, Sole fillets are usually my go to because of how fast they are to prepare. You want a meal that’s easy to make, ready in 20 minutes or less and still taste delicious…this is it! It was so good that a few days later my husband asked me to make it again and I didn’t resist.

Baked Sole with Spicy Mango Chili Salsa

This baked Sole smothered in an easy to make Spicy Mango Salsa can be served over a bed of rice or quinoa. Perfect for a light lunch or dinner.
Ingredients
  • 8 sole fish fillets
  • ⅛ cup of margarine melted
  • 3 eggs
  • 2 diced roma tomatoes
  • 4 chopped mini bell peppers
  • ½ diced onion
  • 2 diced cloves of garlic
  • ½ cup sliced mushrooms
  • ¼ cup Bandar Foods Spicy Mango Chili sauce
  • ⅛ cup Soy Sauce
  • ⅛ cup Worchestershire sauce
  • 1 tbsp. lemon juice
  • 1 tsp of oregano
  • seasoning salt to taste (optional)
Instructions
  1. Preheat oven to 375° F.
  2. Place fish fillets in lightly sprayed large baking sheet or pan. Lightly brush on melted butter and bake for 10-15 minutes
  3. In a small bowl mix the Bandar Foods Spicy Mango Chili Sauce and other wet ingredients plus oregano.
  4. Add remainder of margarine to frying pan or wok. Scramble egg for 2 minutes on medium heat. Add veggies and bowl of wet ingredients to eggs plus seasoning salt to taste. Simmer uncovered for 5-10 minutes stirring occasionally until veggies reach desired consistency.
  5. Serve over a bed of rice or quinoa.
