Galaxy Cupcakes
up These are fun to serve anytime of the year and will inspire you to look up at the wonder of the night sky, while dreaming of a galaxy far away. My family loves a good cupcake. They are fun to serve at birthday parties, as a special classroom treat, or just because a day is always sweeter with a unique treat. This galaxy cupcake recipe has a few more steps than your average cupcake, but the results are visually stunning and well worth the extra effort.

As you can see, these galaxy cupcakes are really colorful. To achieve this effect you will use 4 colors of food coloring; I recommend using a gel based food colouring for vibrant results. You will add the gel food colouring to both the cake batter and the icing. When adding your icing to a piping bag, add one color to each side of the bag so that they swirl together. If you just add them all to the center, the color will not turn out properly.

Ingredients for Galaxy Cupcakes
- 1 box of your favourite cake mix
- 3 eggs at room temp
- 1/2 cup of softened unsalted sweet cream butter
- 1 cup whole milk
- 1 tbsp vanilla extract
- Black, Purple, Leaf Green and Sky Blue gel food colouring
- White cupcake liners
- Cupcake Baking Pan
Directions
1. Preheat oven to 350.
2. Line muffin pan with the white cupcake liners
3. In a medium bowl, add the cake mix, butter, milk, and vanilla extract and stir until combined.
4. Divide the batter into 4 bowls and add a food colour gel into each bowl.
5. Add the Purple colouring to one bowl and mix until combined.
6. Next add the Black food colouring to the second bowl, stir to combine.
7. Add the Leaf Green colouring to the third bowl, stirring until combined.
8. Add the Sky Blue colouring into the fourth bowl and mix until combined
9. Begin to fill the cupcake liners.
10. Scoop about 1 tbsp of each coloured batter into the cupcake continue to rotate colours until it is 3/4 of the way full.
11. Bake in the oven for about 20 minutes.
12. Pull out the cupcakes and allow to cool before frosting.

Galaxy Cupcakes Frosting Ingredients
- 1 cup unsalted sweet cream butter, softened
- 2 1/2 cup powder sugar
- 1 tsp vanilla extract
- 3-5 tbsp heavy whipping cream
- Black, Purple, Leaf Green and Sky Blue gel food colouring
- 1 disposable piping bag with a star tip
- 1 cup galaxy sprinkles (see below)
Ingredients for Galaxy Sprinkles
1 pouch of Light green, Light Blue, and Purple Nonpareils and sprinkle Jimmies
Directions for Galaxy Frosting
1. Using a stand mixer, combine all ingredients and mix on medium speed.
2. Mix until you see stiff peaks in your frosting.
3. Once the frosting is made, split it into four bowls.
4. Add about 2-4 drops of each color: Purple in one bowl, blue into the second bowl, black into the third bowl and green into the fourth bowl.
5. Place the piping bag into a large glass and fold the sides of the bag over.
6. Scoop one spoonful of the Purple frosting onto one side of piping bag.
7. Now scoop one spoonful of the Blue frosting onto another side of the piping bag.
8. Scoop one spoonful of the green frosting onto the side of the piping bag next to the blue color
9. Scoop one spoonful of the black frosting onto the side of the green frosting and squeeze the icing together.
10. Frost the cooled cupcakes.
11. Garnish with Galaxy sprinkles.
