Chicken Cobb Salad with Honey Mustard Dressing

Cobb salad is one of my favourite salads – really, any salad with hard boiled eggs, chunks of chicken breast聽and sweet dressing is my fave!

Honey Mustard Chicken Cobb Salad

This particular Cobb salad is loaded with healthy vegetables; romaine lettuce, cucumber & cherry tomatoes. It’s light, delicious and full of protein – the perfect lunchtime meal or start to your summer dinner.

  • 路聽聽聽聽聽聽聽聽聽3 cups romaine lettuce, chopped
    路聽聽聽聽聽聽聽聽聽1 cup cherry tomatoes, chopped
    路聽聽聽聽聽聽聽聽聽3/4 cup cucumber, sliced
    路聽聽聽聽聽聽聽聽聽1 avocado, peeled, pitted and sliced
    路聽聽聽聽聽聽聽聽聽2 hardboiled eggs
    路聽聽聽聽聽聽聽聽聽1 grilled chicken breast


  • 路聽聽聽聽聽聽聽聽聽2 tablespoons apple cider vinegar
  • 路聽聽聽聽聽聽聽聽聽1 tablespoon honey
  • 路聽聽聽聽聽聽聽聽聽1 tablespoon bold mustard
  • 路聽聽聽聽聽聽聽聽聽3 tablespoons olive oil
  • 路聽聽聽聽聽聽聽聽聽Salt and pepper to taste


  1. 1. Place eggs in pot of water until it goes through a rapid boil for 10 minutes.
  2. 2. Grill chicken for 10 – 12 minutes, flipping half way through.
  3. 3. While the eggs are boiling and chicken is grilling use this time to wash and cut the veggies to size of your liking.
  4. 4. Peel the hard boiled eggs. Slice the eggs and cut the chicken into pieces.
  5. 5. In two bowls divide up the ingredients evenly.
  6. 6. In a small bowl , whisk together the dressing ingredients.
  7. 7. Serve salads immediately with dressing on the side.
  8. 8. Enjoy!
