Chicken Cobb Salad with Honey Mustard Dressing

Cobb salad is one of my favourite salads – really, any salad with hard boiled eggs, chunks of chicken breast and sweet dressing is my fave!

Honey Mustard Chicken Cobb Salad

This particular Cobb salad is loaded with healthy vegetables; romaine lettuce, cucumber & cherry tomatoes. It’s light, delicious and full of protein – the perfect lunchtime meal or start to your summer dinner.

Recipe makes 2 servings.

Ingredients

  • ·         3 cups romaine lettuce, chopped
    ·         1 cup cherry tomatoes, chopped
    ·         3/4 cup cucumber, sliced
    ·         1 avocado, peeled, pitted and sliced
    ·         2 hardboiled eggs
    ·         1 grilled chicken breast

Dressing

  • ·         2 tablespoons apple cider vinegar
  • ·         1 tablespoon honey
  • ·         1 tablespoon bold mustard
  • ·         3 tablespoons olive oil
  • ·         Salt and pepper to taste

Directions

  1. 1. Place eggs in pot of water until it goes through a rapid boil for 10 minutes.
  2. 2. Grill chicken for 10 – 12 minutes, flipping half way through.
  3. 3. While the eggs are boiling and chicken is grilling use this time to wash and cut the veggies to size of your liking.
  4. 4. Peel the hard boiled eggs. Slice the eggs and cut the chicken into pieces.
  5. 5. In two bowls divide up the ingredients evenly.
  6. 6. In a small bowl , whisk together the dressing ingredients.
  7. 7. Serve salads immediately with dressing on the side.
  8. 8. Enjoy!
